Instructions:
Prepare the pastry:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a medium saucepan, combine water, butter, and salt. Bring to a rolling boil over medium-high heat.
- Reduce heat to low and add flour all at once. Stir vigorously with a wooden spoon until the mixture forms a smooth ball and pulls away from the sides of the pan.
- Let the mixture cool slightly for about 1 minute.
- Beat in eggs one at a time, mixing well after each addition until the dough is smooth and glossy.
Pipe the balls:
- Transfer the dough to a pastry bag fitted with a large round piping tip.
- Pipe small, equal-sized balls onto the prepared baking sheet, leaving about an inch of space between each.
Bake:
Bake for 20-25 minutes or until golden brown and puffed up.
Immediately transfer the profiteroles to a wire rack to cool completely.
